Instead of Interviews just being for mods+, I think you should also open it to well known members or at least regulars. I have a lot of questions to ask.

I concur. I feel that I should be able to answer some questions as well.
But...One thing. We can't edit others' posts.

well we may have a different system, we pm our q's then the person being questioned edits his first post. ie so and so says: whats your favorate pie? answer: blue.
like that

Or just post after post in the thread.
Like so:
Topic: Interview Me! <Reply #2 on Today at 2:34 PM> randomguy123: What's your favourite game?
<Reply #3 on Today at 2:50 PM> randomguy321: FlyFF, gameplay's nice, and the graphics aren't bad.

Or the interviewee can edit the first post of the thread to include new questions and answers so I don't have to go down the thread looking for all the questions.

I think the best idea would be to send the question asker a PM with the answers, so he can edit his post(s).

Or we could just let each person do what s/he wants to do with their own thread.

We could always Axe "The Interview" board and have an introduction topic board.

We don't get enough new members for it to be worthwhile.
